Because it skips the malting process, it keeps more of wheat's native protein — exactly what hazy IPAs, witbiers, and tart wheat beers rely on for their opaque looks and silky texture.
With an extract potential of 34 PPG and a color of just 1 °Lovibond, Flaked Wheat adds gravity with virtually no color, keeping pale beers pale while transforming their appearance and mouthfeel. Pre-gelatinized flakes go straight into the mash with no cereal cooking required.
